While bored at home on my day off i decided to give Thai style fruit carving a go. been meaning to learn how to do more old school or intricate garnishing techniques for a while now, even if i do cook at a restaurant that doesn't really do baquets at all. Knife skills are still important to constantly refresh on and doing more oddball stuff like this actually helps with the everyday stuff quite a bit. So armed with a small watermelon from the local store and a paring knife and plenty of youtube videos i set out to make a flower out of a melon:
The starting set up, the melon is in a pot to act like a turntable. first step, peeling away the rind and making the inner petals
Alright rind peeled off and so far so good, now to make the circle of inner petals, the ones that fold inwards instead of out. started with a circle and cut out 5 petals and then tried to repeat that once more but it got a bit small for my knife.
the first set of outer leaves. now to make more shaped leaves as they get bigger.
ok first set of big leaves and my not quite perfect alignment starts to show, something to work on for sure. now to repeat the process.
added another layer and carved out center accents to the big leaves, now to get to the edge and finish it up.
The end of carving as i make small bavels to garnish the edge and make the bottom flat to have the melon stand on a plate.
the final product, i am pretty happy with how well it came out for a first try. Still huge room for improment as well as more intricate designs as this one is pretty simple. Some of the stuff out there is just nuts in terms of details, but that will come later. Overall it looks like a flower so i am gonna count that as a win, even if it is in the bronze league of carving.

That looks really cool!
You mentioned it not having "perfect alignment" at one point. Don't obsess over symmetry; nature is not always perfectly symmetrical, in fact, it rarely is. It's usually the slight deviations that make it beautiful.

Its unfortunate that the watermelon wasn't more ripe. A brighter red would look good.
