Food Porn: Banana Bread

Hey guys! :D I'm back.

I've been a little busy (coughSWTORcough)... but I've finally made some time to cook up some tasty treats...This time, it's banana bread!

INGREDIENTS
  1. 1 3/4 cups of Whole Wheat Flour
  2. 1 Teaspoon of Baking Soda
  3. 1/2 cup of chopped walnuts
  4. 5 or 6 ripe Bananas
  5. 1 cup of Raisins
  6. 2 Eggs
  7. 1 tablespoon of Cinnamon
  8. 2 tablespoons of Coconut Oil* (you can substitute butter if you'd like)
  9. 1/4 cup of Rolled Oats


PROCEDURE
  1. Preheat your oven to 350° F.
  2. Grease the sides of a loaf pan with 1 tablespoon coconut oil.
  3. In a bowl, combine your flour and baking soda.
  4. In a separate bowl, beat two eggs.
  5. Add 1 tablespoon of melted coconut oil to the eggs.
  6. Combine your eggs with your flour. Mix until you get a doughy consistency.
  7. Take your bananas and smash them into a mushy consistency. (You can do this by taking all of your bananas and placing them in a plastic bag. Then proceed to beat the crap out of the bananas. Great stress reliever if you're on a losing streak!). If you want to have banana chunks in your bread, reserve one banana and chop it into small 1/2 inch chunks.
  8. Add in your banana mixture slowly to avoid getting lumpy dough.
  9. Add in your raisins, walnuts, cinnamon and half of your oats.
  10. Pour mixture into your greased baking dish.
  11. Sprinkle the remaining oats on top of your bread.
  12. Put baking dish in the oven and bake for about 50 minutes (cooking times may vary slightly due to altitude).
  13. When the bread is finished, remove from oven and let it cool.
  14. Eat and enjoy!


To get an added bit of healthiness, you can also add in a few tablespoons of Flax Seed. It'll give the bread a bit more of a nuttier flavor.
I didn't add in flax seed this time, but I probably will for my next batch. :3

Looks pretty good, but it seems pretty difficult to me to bake bread, so I probably won't try to make it unless I'm extremely bored and have nothing else to do.

This is pretty much what I do when making banana bread, save for the oats and raisins. I'll have to try that at some point as it looks delicious! Also, for the less healthy style, spread cream cheese on top... soo good.

It actually wasn't that bad. This was the first time I made bread, and it turned out pretty good. Just be cautious of the baking time, and it'll be fine. :D

Bunker rush banana bread sounds like best banana bread! I never thought of adding raisins. Sounds really good, I'll have to try it some time

Cream cheese is good on basically any type of bread. Mmm making me hungry probably gonna go buy some bananas.

I've never had cream cheese on anything other than bagels. :0 Maybe i'll try that out sometime...

Banana bread is a type of quick bread, it's pretty easy to make and rather forgiving. Yeast breads, on the other hand... those are the "pretty difficult" ones.

I'm confused about step 5 though, what do you mean "melted coconut oil"? Is the melted part just if you're using butter?
I like the way the walls go out. Gives you an open feeling. Firefly's a good design. People don't appreciate the substance of things. Objects in space. People miss out on what's solid.

Banana bread is what we in Holland would call a cake. A variation on the concept flour + butter + sugar = cake. It's actually not that hard at all to make and it's CRAZY good. I love this stuff, I've never made it with raisins or oats but I don't see what could go wrong with this. Really guys, do yourself a favor and make this recipe.

Question for kierpanda though: Is this the kind that will be a little sticky on the outside? I love that texture for my bananabread. Also if you've never done this, make it with dark brown sugar sometime, it'll give its own interesting caramelly flavour to your bananabread

The coconut oil I have comes in a jar and it's pretty solid. ): So it wouldn't mix well into the batter unless I melted it down.
Kind of goes the same for your butter if it's fresh out of the fridge. If you let the butter sit out at room temperature, it'll be malleable enough to mix into the dough.

I think there might be liquid coconut oil out there -- but the store I went to only had a jar. :0

Nope, this one is has that "crusty" bread exterior. It's pretty mushy on the inside though, especially if you put a lot of banana chunks in it.. Then it gets uber mushy.

I've never tried banana bread that was sticky on the outside. :0 Is it like a glaze you put on it?

My mom makes banana bread with the dark brown sugar. It's pretty delicious. <3
