SRS is a good choice, ED is an obvious other one for endgame bossing specifically. This list should also give you some ideas, I still want to test the Hiero SWT because it could be pretty beast for safe and fast maps as a first character.
Sunder variants (Slayer/Jugg/Gladiator) are also stronk right now and start rolling early.

We won't be at the most(ish) builds vaporize yellow bosses and can do up till T14-15 easily state any more, but I feel that increasing the difficulty to that extent is fine. Power creep has gotten pretty crazy the last year or so, IMO. Plus there's always the option of skipping a boss.
You ever eat a Temple Boss slam before? It's pretty much instant death.
i would argue if you're being hit by the slam on a regular enough basis, that's probably a you problem not a game problem. it's an incredibly telegraphed move which malachai, izaro, dominus, voll, shaper and several others have.
One boss is fine.
Two bosses when you use summons, golems, or anything that the boss can attack (totems) then becomes a problem.
Lol, I just logged in my PoE account on the official site. I didn't for at least 4 months, and in May someone apparently wanted to buy my Cloak of Flames alt art which I got from season 4 racing. So I went checking how expensive that currently is... 500 Ex, wtf.
I kinda miss those racing days. Especially Descent and Descent Champions coming out were both highlights and great fun.

Yep. I'd suggest glad over slayer for a safe build. Regarding Glad: on HC just go Versatile Combat ascendacy in cruel. + Show Spoiler +

For Offhand use prismatic eclipse in favor of deathhand for the extra block chance and atkspd for leap slam mobility. Maybe skip out on the ranger points and go deeper into marauder leftside area.
And ofc 1H/Shield is also perfectly viable.
Otherwise Ancestral Warchief is never a bad choice for safe and budget friendly build. I prefer dualwield but 1h/shield can be fine too (and ofc facebreaker ).

I have been trying to make a starter totem build for 3.0 I made a really cool one for frostbolt totems but gave that one to a friend. So I could use some ideas (no facebreaker AW or Chieftain Flame Totems :D). Best I could find that balances both dps and AoE are RF totems. I also looked into crit ranged attack totems (lioneye and 100% conversion to fire with Blast Rain and Signal Fire or AoF) and crit physical bladefall totems (both had bad dps). The flame burst totems I mentioned earlier I kind of tested in standard and their AoE is bad so I gave up on those. I was also looking into Blight totems (from what I read biggest problem of Blight is need to stand there for too long before its damage stacks up so I assumed I can keep moving and totem can stay there doing that :D) but I am not sure that works.
I don't want to depend on any league specific uniques like Xoph's bow and such. Like I could make a good Ngamahu Flame AW build but that would be a terrible unique to depend upon (it was expensive during Breach league as well).
So any ideas for any other interesting totem build that both had good dps and good clear speed?

Glacial Cascade totems is probably pretty strong, though I'm guessing it would end up feeling a lot like a worse Glacial Cascade mines.
Scorching Ray totems are fine.
The new chaos skill looks like it might work well with one of its parts (either Summon Skeletons or Dark Pact) in a totem, and the other one self-cast.
Charged Dash totems sound hilarious, but probably won't be very good. If you stack move speed they could maybe clear well? Have to wait and see.
Hmm I have to check out a video of that version of Flame Totems :D But except for possibly looking cool how well does it clear and kill bosses? :D
Glacial Cascade totems just sounds like a worse version of Frostbolt totems..
I was thinking about Scorching Ray totems but wouldn't they just be a worse version of RF totems? Same problems with enemies outside its range but also less AoE vs those inside its range.
New chaos skill is not really a totem skill even if you got skeleton totems. Maybe once we know its exact stats it can work as a chaos damage dealing totem or something that powers the spell with it own life.
I did think of Charged Dash totem but I also did look into Lightning warp totems and both will probably have same problem (lack of good base damage and too slow dealing of that damage)
I'm going to come back and play this league after having Sat out the last two due to not having the time. I sure as hell regret not having been able to play legacy league :C
