Is there anything to stop people just endlessly killing you as I go aboutmy questing on a PvP server on this game. I don't mind PvP but whilst I'm questing it can become frustrating at times

Crafting isn't really worth doing before 60, materials from extracting isn't that great either except maybe leather extraction. Personally I just vendor everything. Gathering gives some nice temporary buffs but overall it slows your leveling down by a lot so if you just want 60 as soon as possible you should just ignore gathering/crafting for now.

If you play a blink class it's really easy to escape from most classes, just blink and dodge behind objects until you get out of combat, mount up, activate autorun then change channels while you ride.

maybe this was asked before but how does latency impact combat? some of the melee swings take a while to wind up. i'd be very frustrated if i missed something that i should have hit
Latency really affects how well you can put combo's together.
That being said even with the server completely full I have experienced so very little lag that it makes me wonder if the game doesn't have limited clientside control of things.
If you are half expecting a sloppy real-time action experience you don't have to worry about that. Its about as tight as it looks unless you are from a foreign land.

Which class has the highest skillcap? I've been enjoying the sorcerer, but it's a little easy and a little boring, just kiting things all day and nuking them on CD. I hear the slayer is really fun, but I also hear that everyone and their dog plays slayer.
man i hit 38 yesterday evening and couldn't play at all due to disconnects and terrible queue times Now I learn level cap is getting removed ._. I was really hoping I could stack up some quests
Berserker does its damage chiefly with one button but the cast time on that one button is so long getting the thing to land is a game all of its own. Berserker is also buts in group PvP settings but does not shine in 1v1.
Archer is probably not your answer, but a good archer can make the lives of everyone in his group a lot easier if shit goes south.
Slayer does the most PvE DPS (in melee) but only has one evade and wears leather, so the risks are high and so are the rewards. This class also facerolls leveling like you wouldnt believe. Because of backstab later on this class is also pretty good at PvP. And despite of its slow attack nature this class is also quite swift.
Sorc does ridiculous PvE damage once you get celerity. This is an all around great class in PvE and PvP of all kinds. Really squishy though. They also have a fireblast glyph that removes the diminishing returns on AoE. I expect this class to get toned down a bit. ATM you pretty much always want one in your dungeon group.
Mystic and priest are both healers. It used to be that Mystics were always preferred but the new dynamic endgame content prevents the Mystic from synergizing with its party as well as the mystic would like, whereas the priest buffs are set in place. They also made a glyph for the priest that gives mana to the party when they use the mana charge spell. All in all both classes are balanced and a good healer can be the difference between a passing group and a failing one. So many healers herpaderp chain lock on heals in this game and wonder why they are getting aggro.
Lancer tanks dungeons. A bad Lancer will not tank anything but let everything run around while they sit behind their shield protecting just themselves. A good lancer will be able to hold aggro in the most ridiculous circumstances while keeping personal damage to a minimum, but not zero. Bad lancers will develop a habit of just taunting and walling up because they have only paired with terrible DPS. Good ones will know that taking some damage is ok if it means staying on top of everyone else. In PvP they also setup kills with leash, and IIRC are unstoppable 1v1.
Warrior. Any class can solo BAMS, but not as fast as a top level warrior can. Warrior takes godlike control to master dungeon tanking the correct way. You have all probably seen me tank dungeons as warrior, thats still not the correct way. Usually in a dungeon I just tank like I am soloing BAMS since the only other person I care about is usually just a sorc or something ranged. A warrior can keep an opponent still just like a lancer can. And has better threat often as well. But the skill difference for the same effect is way different. Because puggers are often terrible I just tank like I am the only one in the room, because when it comes down to it at the end of the day I often am.
My personal slogan is "If it is to be, it is up to me." Ten words all two letters long. If I want to log on early morning and solo some BAMs I dont want to wait around for people i know and i dont want to risk grouping with idiots. So Warrior lets me do what I need all by myself. I can even solo dungeon bosses with it.

No, two healers means you dont have enough DPS for endgame. Neither Mystic or Priest have a DPS mode either so there isnt really anything you can do.
Thats with only one DPS not on the ball as well. There are also other bosses that have self stacking mechanics, eventually you wont be able to heal through it. And some bosses have enrage timers where they just wipe the floor or blow everything up.
Check out the end. This is with ideal group composition and people with a lot of experience with the game, in Korea. When the screen goes black there is an instant kill and they were seconds from it.
And atm the favored group composition is Lancer, Warrior, Sorc, Slayer, Priest or Mystic (often Priest). You can drop a DPS for a Berserker or Archer but generally if both an Archer AND and Berserker are in the same group many bosses the Koreans wont even attempt. You would have to really trust both to bring both in.

It may sound like stacking quests is the faster way to xp but its actually a lot of wasted time if the lvl cap is removed. Think about it, you would be spending a lot of time xp'ing in the same place in CR stacking quests without getting xp for mobs. But now there will be new areas with better mobs, better quests that you can get xp from and that will lvl you up a lot faster.

Does it make sense to have 2 sorcs in the endgame instead of a warrior or slayer? Or 3 sorcs? I mean burst damage from sorcs is so high with FB and VP and I can imagine that with celerity up it would be even higher after 48.

I know but what I am saying is that its better they removed the cap earlier rather than later. Which is probably why they did so.
