Looks like I'll be in China for a while so I'm going to order a new gaming laptop from Taobao, the Chinese counterpart to Amazon.
So far, I've narrowed down my search down to 2 laptops with almost identical configurations, save for the GPU:
Laptop 1: CPU: i7-6700HQ RAM: 16GB GPU: GTX 1060 (6GB) Display: 15.6" IPS Full HD Storage: 128GB SSD + 1TB HDD Price: 6499 Yuan ~ $1046.66 USD
Laptop 2: CPU: i7-7700HQ RAM: 16GB GPU: GTX 1070 Display: 15.6" IPS Full HD Storage: 256GB SSD + 1TB HDD Price: 8999 Yuan ~ $1449.28 USD
I'm hoping the laptop could last me at least a few years, is the ~40% price increase of laptop 2 worth it?

Will you use a 144hz or a 1440p or a 4k monitor or something like that?
Otherwise if you will just use the full hd display of the laptop, I am inclined to say that the 1060 is good enough.
Edit: Personally, if I were to drop that money, I would go with the 1070 and would try to save on the CPU instead. A good i5 could save some money and should be enough for gaming.

If form factor matters, go with the 1060 and just game at 1080p.

Thanks for replies, did a bit more research yesterday and it seems that the 7700HQ is only marginally faster than the 6700HQ, and an additional 128GB of SSD storage isn't a huge deal either. I'll won't be using an external display, so I'll be gaming at 1080p for the foreseeable future.
However, the 1070 is on average ~30-40% faster, and in certain games like GTA V and Rise of the Tomb Raider the 1060 struggles to maintain acceptable minimum framerates when maxed out even at 1080p.
I'm just concerned that with Vegas from AMD and next-gen consoles on the horizon, games will become a lot more demanding. So I'm really leaning towards the higher-end model, hoping that I'll still be able to run games at 1080p on medium 3 years from now.

the next gen consoles won't be coming in a few years imo. they have just released the next pro version of their consoles but the games are still going to be optimized for the normal PS4/xbox one.
That being said, 1070 is a beast. It's going to last. imo only get the 1060 if it is light and portable.

Honestly I don't know that much about gaming laptops and for 500 you won't get that much. Also I am not sure where your are buying.
But nevertheless see if you can find this laptop or another one with similiar specs in your country.
Sadly it is sold out in Germany, but this is probably the best bang for your buck under 600 euros and can handle the games you mentioned.
Edit: Basically make sure you have an i5 quadcore cpu and the MX150 gpu. The next best gpu is the 1050 but too expensive. Everything below that is too risky imo.

I am using a Legion Y7000 for streaming SC2. Its performance when I am not running OBS is incredible, but for streaming it's not so good. I can only do 720p 60fps at around 3000 bitrate.
Otherwise it's pretty awesome for SC2. I maintain over 300 FPS during games.
EDIT: Didnt realize you were looking for something under 500. I found this for less than $1,000 so perhaps if you dig you can find it for a good price.
